Berbere is a fiery spice mix of blended aromatic Ethiopian spices with warm flavors. It's simple to make and tastes amazing on chicken or fish.

Ingredients

If Using All Ground Spices
  • 2 tbsp cayenne powder
  • 1 tbsp paprika
  • 1 1/2 tsp ground fenugreek
  • 1 tsp garlic powder
  • 1 tsp cardamom
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp Coriander
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • 1/4 tsp Turmeric
  • 1/4 tsp clove
  • 1/8 tsp allspice
If Using Whole and Ground Spices
  • 2 tbsp cayenne powder
  • 1 tbsp paprika
  • 2 tsp fenugreek seeds
  • 1 tsp garlic powder
  • 12 cardamom pods
  • 1 inch cinnamon stick
  • 1/2 tsp ground ginger
  • 3/4 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp black peppercorns
  • 1/4 tsp Turmeric
  • 4 cloves
  • 1 allspice berry

Instructions

Ground Spices

  1. If using all ground spices, whisk together to combine.
Whole Spices
  1. In a small skillet dry toast over medium heat the fenugreek, coriander, cumin seeds with the cinnamon stick, cardamom pods, peppercorns, allspice and cloves for 2-3 minutes until fragrant.
  2. Let toasted spices cool and transfer to spice grinder along with remaining ground spices (cayenne, paprika, garlic, ginger and turmeric powders). Grind until a fine powder.
  3. Store in an airtight container for up to 6 months.
