Bernaise Sauce
Bernaise Sauce is a rich and creamy sauce made by whisking together butter, egg yolks, cream, minced onion, white wine vinegar, lemon juice, and tarragon until thickened. It offers a tangy, herbal flavor and smooth texture that complements steaks and other grilled meats. The sauce is cooked gently while whisking to prevent curdling and served immediately for best texture.
Ingredients
- 4 tablespoons butter unsalted
- 2 large egg yolk
- 3 tablespoons heavy cream
- 2 tablespoons onion , minced
- 2 teaspoons white wine vinegar
- 2 teaspoons lemon juice
- 2 teaspoons tarragon , chopped (or 1 teaspoon dried)
- 1/2 teaspoon kosher salt
- 1 pinch black pepper coarse ground
- 1 pinch cayenne pepper
Instructions
- To a saucepan on medium heat add the butter, eggs, heavy cream, onion, vinegar, lemon juice, tarragon, salt, black pepper, and cayenne pepper and whisk until melted and combined.
- Keep whisking as it is melting to avoid the eggs cooking.
- Whisk, as it cooks for 2-3 minutes until thickened.
- Serve immediately over rested steaks.
