Berries & Cream Chia Pudding

Ingredients

  • 1 cups milk of any kind..almond milk or coconut are wonderful too
  • 3 tablespoons chia seeds
  • ½ tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¼ cup strawberries sliced
  • ¼ cup blueberries

Instructions

    Cup of Yum
  1. In a bowl, blend honey and vanilla with milk.
  2. Stir in chia seeds.
  3. Pour into a mason jar or container.
  4. Chill for at least 2 hours in the refrigerator or overnight.
  5. Top with fresh berries, nuts/ nut butter, fruit, granola, etc

Notes

  • Nutritional information includes a ½ cup each of strawberries and blueberries.
  • Use stevia or other sweeteners of choice in lieu of honey or maple syrup.
  • If your pudding is not thick enough, add more chia seeds. Start with ½ tablespoon and let it sit a little longer.
