Berry Toast with Homemade Marshmallow Fluff

Ingredients

For the berry toast
  • 1 slice bread toasted
  • 1 peanut butter
  • fresh strawberries
  • fresh blueberries
  • marshmallow fluff
For the homemade marshmallow fluff
  • 2 egg whites
  • ½ cup granulated sugar
  • ¼ cup water
  • 1 tsp vanilla extract
  • 1 tsp lemon juice

Instructions

  1. Toast a piece of bread and layer it with peanut butter. Then add your homemade marshmallow fluff and fresh berries.
For the homemade marshmallow fluff
  1. With a hand mixer, begin beating egg whites to soft peaks. Add in the lemon juice once the peaks begin to form. 
  2. In a small saucepan, combine sugar, water and vanilla and bring to a boil.
  3. Turn mixer back on low speed, and slowly drizzle the hot syrup into the egg whites.
  4. Turn speed up to medium-high, and beat until the egg whites cool down to room temperature.
  5. Serve immediately or store refrigerated for a couple days. This keeps well!
