Ingredients
For the berry toast
- 1 slice bread toasted
- 1 peanut butter
- fresh strawberries
- fresh blueberries
- marshmallow fluff
For the homemade marshmallow fluff
- 2 egg whites
- ½ cup granulated sugar
- ¼ cup water
- 1 tsp vanilla extract
- 1 tsp lemon juice
Instructions
For the berry toast
- Toast a piece of bread and layer it with peanut butter. Then add your homemade marshmallow fluff and fresh berries.

For the homemade marshmallow fluff
- With a hand mixer, begin beating egg whites to soft peaks. Add in the lemon juice once the peaks begin to form.
- In a small saucepan, combine sugar, water and vanilla and bring to a boil.
- Turn mixer back on low speed, and slowly drizzle the hot syrup into the egg whites.
- Turn speed up to medium-high, and beat until the egg whites cool down to room temperature.
- Serve immediately or store refrigerated for a couple days. This keeps well!
