Ingredients

  • 1 cup all-purpose flour
  • 1⅔ cups granulated sugar divided
  • 6 tablespoons unsweetened cocoa powder divided
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • ½ cup milk
  • 6 tablespoons unsalted butter melted and cooled (¾ stick)
  • 1 teaspoon pure vanilla extract
  • ¾ cup chocolate chips
  • 1½ cups boiling water
  • vanilla ice cream optional, for serving

Instructions

  1. Preheat oven to 350°F. Butter an 8x8-inch baking pan and set aside.
  2. In a medium mixing bowl, whisk together the flour, ⅔ cup sugar, ¼ cup cocoa powder, baking powder, and salt until combined. In a separate bowl, whisk together milk, butter, and vanilla until smooth. Add the wet mixture to the dry mixture and stir to combine into a thick batter. Pour into the prepared baking dish.
  3. In a small bowl, stir together the remaining sugar and cocoa powder. Sprinkle evenly over the batter, then sprinkle on the chocolate chips. Slowly pour the boiling water over the top of the mixture without stirring.
  4. Bake for 30-40 minutes, until the center is just set. Serve slightly warm with ice cream, if desired.

Notes

  • Storage: Store chocolate cobbler in an airtight container in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • Bake this chocolate cobbler with a sheet pan underneath your baking dish. This will help to catch any drips so they don't end up in the bottom of your oven.
  • Let your chocolate cobbler cool for 5 minutes before serving.
