These best easy roasted carrots are ready in just 20 minutes! They make the perfect side dish and the leftovers can be added to soups, stews or casseroles.

Ingredients

  • 2 pounds carrots washed and cut down the middle
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon kosher salt
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon black pepper
  • 1 tablespoon minced fresh parsley optional

Instructions

  1. Preheat oven to 425 degrees F.
  2. Line a sided sheet pan with parchment paper.
  3. Lay carrots onto the prepared sheet pan, drizzle with olive oil, and sprinkle with ground ginger, kosher salt, allspice, cinnamon, and black pepper.
  4. Toss the carrots on the sheet pan so they evenly coated.
  5. Roast for about 20 minutes or until they have reached your desired doneness.
  6. Sprinkle with parsley before serving.

Notes

  • 20 minutes of cooking time results in a soft carrot with a little bit of a bite. If you like more well-done carrots cook for longer.
