Best Ever Citrus Curd

Ingredients
- 1/2 cup orange or lemon or blood orange
- 1/4 cup lime or grapefruit
- 2 tablespoons citrus zest
- 2 egg lightly whisked
- 2 egg lightly whisked, yolk
- 1 cup sugar
- salt pinch
- 6 tablespoons butter cubed
Instructions
- In a medium saucepan, add the eggs, citrus juice, citrus zest, sugar, and salt. Stir over medium heat constantly until the mixture boils and become thick and glossy. About 8-10 minutes
- Remove from heat and add the butter. Mix until butter is completely melted
- Strain mixture, cover with plastic wrap and chill for a minimum of 2 hours
- Enjoy

- When making lemon or orange curd use 1/2 cup of juice.
