Best Ever Citrus Curd

Ingredients

  • 1/2 cup Orange, Lemon, Blood orange OR
  • 1/4 cup Lime, Grapefruit *
  • 2 tablespoons Citrus zest
  • 2 eggs lightly whisked
  • 2 egg yolks lightly whisked
  • 1 cup sugar
  • Pinch salt
  • 6 tablespoons butter cubed

Instructions

    Cup of Yum
  1. In a medium saucepan, add the eggs, citrus juice, citrus zest, sugar, and salt. Stir over medium heat constantly until the mixture boils and become thick and glossy. About 8-10 minutes 
  2. Remove from heat and add the butter. Mix until butter is completely melted
  3. Strain mixture, cover with plastic wrap and chill for a minimum of 2 hours
  4. Enjoy

  • When making lemon or orange curd use 1/2 cup of juice.
  • When making lemon or orange curd use 1/2 cup of juice.
  • When making grapefruit or lime curd use 1/4 cup of juice
