Ingredients

  • 1 lb breakfast pork sausage ground
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cups buttermilk biscuits crumbled, store-bought or homemade
  • 2 cups cheddar cheese grated
  • 1 cup cherry tomatoes halved
  • 2 tablespoon fresh sage chopped (or 2 teaspoons dried sage)
  • ¼ cup pure maple syrup
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 6 large eggs

Instructions

    Cup of Yum
  1. Preheat oven to 350°F.
  2. In a sturdy skillet (preferably cast iron), cook the sausage, onion, and garlic over medium heat until sausage is browned and the onion is soft, about 10 minutes.
  3. Add crumbled biscuits, cheese, tomatoes, sage, maple syrup, salt, and pepper. Stir until well blended.
  4. Make 6 indentions (using the handle of a long spoon works well) in the sausage mixture, and break an egg into each indention.
  5. Bake until eggs have just set, approx. 20 minutes (22 to 24 minutes for fully-cooked egg yolks).
