Ingredients
- 1 lb breakfast pork sausage ground
- 1 medium onion chopped
- 3 cloves garlic minced
- 2 cups buttermilk biscuits crumbled, store-bought or homemade
- 2 cups cheddar cheese grated
- 1 cup cherry tomatoes halved
- 2 tablespoon fresh sage chopped (or 2 teaspoons dried sage)
- ¼ cup pure maple syrup
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 6 large eggs
Instructions
- Preheat oven to 350°F.
- In a sturdy skillet (preferably cast iron), cook the sausage, onion, and garlic over medium heat until sausage is browned and the onion is soft, about 10 minutes.
- Add crumbled biscuits, cheese, tomatoes, sage, maple syrup, salt, and pepper. Stir until well blended.
- Make 6 indentions (using the handle of a long spoon works well) in the sausage mixture, and break an egg into each indention.
- Bake until eggs have just set, approx. 20 minutes (22 to 24 minutes for fully-cooked egg yolks).
