Best Ever Sweet Potato Casserole

The Best Ever Sweet Potato Casserole is made with souffle style mashed sweet potatoes and layered with a crispy, decadent, pecan topping .

Ingredients

  • 2 sweet potatoes
  • ½ stick butter ¼ Cup
  • ½ teaspoon salt
  • ½ cup dark brown sugar
  • 2 eggs
  • ½ teaspoon nutmeg
  • ½ cup half and half
Pecan Streusel Topping
  • 1 cup pecans
  • 1 teaspoon cinnamon
  • ⅓ cup flour
  • ⅔ cup brown sugar
  • ½ tick butter

Instructions

  1. Peel and cube the potatoes to boil (SEE NOTES)
  2. The potatoes are done when you can slide a knife in easily.
  3. At this point strain them and discard the water.
  4. Let them sit for 2 minutes to make sure all the water has evaporated
  5. Add all of the ingredients except the eggs and mash well to incorporate.
  6. Beat the eggs and add them in only once the potatoes are lukewarm as you don't want the eggs to cook and scramble.
  7. Set the potatoes aside and prep your streusel topping (SEE NOTES)
Pecan Streusel Topping
  1. Preheat the oven at 350 degrees and prepare the Streusel Topping.
  2. Chop the pecans
  3. Toss the Pecans in the flour, sugar and cinnamon and pour the melted butter in the mixture, stirring and tossing till a crumble forms.
  4. Pour the mashed potato mixture in an oven safe baking dish and sprinkle a dense layer of the topping.
  5. Bake for 30 minutes. During this time the potatoes will set and the topping will crisp up.

Notes

  • Boiling The Potatoes - Cutting the potatoes helps them cook quicker and more evenly. Make sure the water in the pot fully covers the potatoes to insure optimal cooking.

  • Before The Potatoes Bake - Your mixture will be a little runny prior to baking. Once they cook, the eggs help them set.
