Best Healthy Gluten Free Gingerbread Muffins
These truly are the best healthy gluten free gingerbread muffins! And they're easy, dairy and egg free, vegan friendly and only 5 ingredients too!
Ingredients
- 1 Box Enjoy Life Foods Muffin Mix
- 1 Tbsp ground ginger
- 2 tsp ground cinnamon
- 2/3 Cup + 3 Tbsp water
- 1/3 Cup molasses
- 1/4 Cup olive oil
Instructions
- Preheat your oven to 400 degrees and spray a muffin tin of cooking spray.
- In a large bowl, whisk together the muffin mix, ginger and cinnamon.
- Add all remaining ingredients and whisk JUST until combined - don't over-mix!
- Fill the muffin cavities 2/3 of the way and bake until a toothpick inserted in the center comes out clean - about 15-16 minutes.* Let cool in the pan for 5 minutes and then transfer to a pan to cool completely.

Notes
- *Your muffins will probably have a little dip in the center of the top - totally normal and the muffins are still perfectly cooked!
