This Mediterranean Yellow Rice uses basmati rice cooked with aromatics like onion, garlic, turmeric, and cinnamon to create a fragrant and colorful dish. The rice is first sautéed with onion and garlic to deepen flavor, then simmered until tender and fluffy after letting it rest off the heat.
Ingredients
- 2 cups basmati rice
- 3 cups water or stock
- 2 tbsp olive oil
- 1 onion chopped
- 2 cloves garlic minced
- ½ tsp Turmeric
- 1 cinnamon stick
- 1 tsp salt
- ¼ tsp black pepper
Instructions
- Heat the olive oil in a saute pan over medium-high heat. Sauté the onion until golden.
- Add in the garlic and cook for about a minute.
- Add the rice and cook for a couple of minutes.
- Then add the turmeric, salt, pepper. Give it a good stir. Then add the cinnamon stick and water. Bring to a simmer, and cook until the water is almost completely evaporated, about 10 minutes.
- Cover and cook the rice for another 15 minutes over medium low heat until the rice is tender and fluffy.
- Turn the heat off and let it sit for 10-15 minutes. Fluff using a fork and serve.

- Let the rice rest covered off heat for 10-15 minutes after cooking to finish steaming and develop texture.
