Best Strawberry Cobbler

Ingredients

  • 1 lb strawberries
  • 1/2 cup granulated sugar
  • 1 tbsp corn starch
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp unsalted butter
  • 3/4 cup plain greek yogurt

Instructions

  1. Preheat the oven to 375F. 
  2. Wash and dry the strawberries, hull them and cut them in halves. Place the halved strawberries in a bowl. 
  3. Add in sugar and corn starch, stir well until all strawberries are coated with sugar and corn starch. Pour the strawberry mixture into a 10 inch cast iron skillet. 
  4. In a bowl, whisk all purpose flour, baking powder and salt. 
  5. Add in the butter and mix well. Add in the Greek yogurt and mix until a very thick batter forms. 
  6. Spoon the batter on the strawberries and bake in the oven for 40 minutes until it's golden brown and the strawberries bubble. 
  7. Serve with vanilla ice cream.
