Bharwa Bhindi
Bharwa Bhindi is a stuffed okra dish where fresh okras are slit and filled with a spiced mixture of coarsely ground roasted peanuts, Kashmiri red chili, ground coriander, cumin, turmeric, and cilantro. The stuffed okras are then pan-cooked with oil until tender and flavorful, offering a textured bite from the peanuts combined with the warmth of the spices. Ingredients
- 1 pound okra fresh
- 3 tablespoons peanuts coarsely ground, roasted
- 1 tablespoon Kashmiri red chili powder
- 1 tablespoon ground coriander
- ½ tablespoon cumin ground
- ⅛ teaspoon Turmeric ground
- ¼ cup cilantro chopped
- 1 teaspoon kosher salt
- 1 tablespoon neutral cooking oil generic cooking oil
Instructions
- Wash and dry the okra. Cut the top and bottom off. Make a vertical slit on each okra, taking care not to split them in half.
- Make the stuffing by mixing ground peanuts, red chili powder, ground cumin ground coriander, turmeric, cilantro and salt.
- Fill the stuffing in the okra slit carefully making sure not to split them in half.
- Once all the okras are stuffed, add oil in a pan over medium heat. Save any leftover stuffing to the side.
- Add the stuffed okra to the pan and cook on medium heat for about 10 minutes stirring gently a couple of times. If there is any leftover stuffing sprinkle it over the cooked okras and give it a gentle stir cooking for another 2 to 3 minutes. Enjoy hot!
Notes
- Use fresh okra and dry it thoroughly before cutting to reduce sliminess.
- Employ a dry cutting board and knife to maintain okra texture and prevent splitting.
- Cook the okras uncovered and stir gently to avoid breaking the stuffed pods.
