Biancomangiare (Almond Milk White Pudding)
Biancomangiare is an easy and quick recipe for Sicilian almond milk white pudding. You can enjoy biancomangiare during breakast, lunch, dinner or as a snack.

Ingredients
- 1 1 liter almond milk
- 300 300 grams sugar
- 150 150 grams cornstarch
- 1 1 whole vanilla bean pod
- pistachios crushed as desired
Instructions
- In a small pot, sift the sugar and the cornstarch together and mix.
- Cut open the vanilla bean pod and scrape out the seeds.
- Add the vanilla seeds to the sugar and cornstarch and mix well.
- Slowly add the almond milk whisking very well as you add and making sure there are no lumps that form.
- Place the pot on the stove over low heat, mixing with a whisk until it boils.
- Remove it from the heat, mix quickly, and then pour the mixture into six small molds previously dampened by cold water.
- Place in the fridge for 5 hours.
- Flip each mold onto a dessert plate and decorate the top of the almond milk pudding with a handful of crushed or chopped pistachios.
