Biscoff Cookie Popcorn

Ingredients
- 8 cups Popcorn we use air-popped popcorn, plain
- salt fine
- 1/2 cup honey
- 1/3 cup granulated sugar
- 1/2 cup Biscoff spread natural
- 1/2 teaspoon vanilla extract
- 1 1/2 cups biscoff cookie chopped
- 1/2 cup white chocolate chips melted
Instructions
- Place the popped popcorn in a large bowl and salt to taste. Set aside.
- Mix the honey and sugar in a small saucepan and bring to a boil. Let it simmer for about 2 minutes, then remove from the heat and add the Biscoff spread. Stir vigorously until all the Biscoff spread is melted, then mix in the vanilla extract.
- Immediately pour the Biscoff mixture over the popcorn and gently stir with a long-handled wooden spoon or spatula until it’s all coated. Spread popcorn on a large baking sheet. Add the Biscoff cookies and drizzle with melted white chocolate and let sit until chocolate hardens. Enjoy!
