Biscotti - 3 Ways in One

Easy Biscotti - 3 Ways in One means three delicious varieties with just one recipe to satisfy every craving! Perfect as a snack or to dip in your coffee.

Ingredients

  • 3 cups all-purpose flour -
  • 2 teaspoons baking powder -
  • 1 pinch salt -
  • ⅔ cup butter, softened
  • 1 cup sugar -
  • 3 large eggs
  • ½ cup semi or bittersweet chocolate, finely chopped
  • 1-2 pinch cinnamon
  • 1 medium orange, grated rind
  • ½ cup almonds, chopped
  • 2 teaspoons instant coffee
  • 2 teaspoons warm water
  • ½ cup hazelnuts, chopped

Instructions

  1. Preheat your oven to 375 degrees. Prepare a rimmed baking sheet with cooking spray. Set aside. 
  2. In a medium sized bowl combine flour, baking powder and salt. 
  3. In a large bowl cream together cream butter and sugar together using a stand or handheld mixer. Gradually beat in eggs, one after the other. 
  4. Using a wooden spoon blend flour mixture with butter mixture. When you cant stir anymore use your hands to knead the dough until combined.
  5. Divide dough into 3 portions, as equal as you can get them. Place each portion of dough into a separate bowl.
  6. With either a wooden spoon or your hands add chocolate and cinnamon to one bowl.
  7. In another, add the orange rind and almonds. 
  8. In the last bowl add coffee and water mixture with the hazelnuts.
  9. Place each ball of dough on a floured surface and roll into ten inch long tubes.  
  10. Place onto baking sheet, several inches apart and press down, flattening each into a rectangle. Bake for 25 minutes or until lightly browned.
  11. Cool completely and cut on diagonal into ½ inch slices with a sharp knife. Place slices flat on your baking sheet and return to your oven for another 5 minutes. 
  12. Remove biscotti from oven, flip each piece over and bake for another 5 minutes. 
  13. Remove from your oven and allow to cool completely. Store in an airtight container. Enjoy!
