Biscotti di Fichi - Fig Cookies

Ingredients

Filling
  • 500 gms dried figs chopped, 1.1 lbs
  • 250 gms apricot jam or fig jam, 8.8 oz
  • 100 gms almonds chopped, 3.5 oz
  • 100 gms hazelnuts chopped, 3.5 oz
  • 50 gms walnuts chopped, 1.75 oz
  • 50 gms pistachios chopped, 1.75 oz
  • 200 gms candied cherries chopped, 7 oz
  • 100 gms raisins 3.5 oz
  • 100 gms candied orange zest chopped, 3.5 oz
  • 100 gms dark chocolate chopped (or chocolate chips, 3.5 oz
  • 1 vanilla extract sachet vanillina or 1 tsp
  • lemon grated, zest of 1
  • 1 tsp cinnamon
  • ½ tsp clove powder
  • 1 espresso shot
  • 100 ml marsala wine or Muscat wine, 3.5 oz
  • 125 gms honey 4.4 oz
Dough
  • 500 gms flour
  • 150 gms sugar 5.25 oz
  • 200 gms lard 7 oz
  • 3 egg
  • 1 vanilla extract sachet vanillina or 1 tsp
  • 1 pinch salt
  • 1 tbsp honey
  • 8 gms ammonium bicarbonate or baking soda, 2 1/2 tsp
Glaze
  • water
  • icing sugar
  • hundreds and thousands nonpareils or confettis

Notes

  • They keep for up to 10 days in an air tight container.
