Biscotti with Chocolate Chips, Cherries, and Almonds

Chocolate chip biscotti with cherries and almonds is delicious with a cup of coffee or espresso!

Ingredients

  • 4 ounces unsalted butter room temperature
  • 1 1/4 cups sugar (8.5 ounces)
  • 2 large eggs
  • 2 teaspoons almond extract
  • 2 1/2 teaspoons baking powder
  • 2 3/4 cups all purpose flour (12.2 ounces)
  • 1/2 teaspoon kosher salt
  • 1 cup almonds chopped and toasted
  • 2/3 cup chocolate chips (or dark chocolate chunks)
  • 6 ounces dried cherries

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment or silicone baking sheets.
  2. In a standing mixer or using a hand mixer, butter, sugar, and almond extract in a bowl until light and fluffy.
  3. Add eggs and beat until well blended.
  4. Whisk dry ingredients together in a bowl.
  5. Mix dry ingredients into wet ingredients until just blended. Don't over-mix.
  6. Mix in chocolate chips, cherries and nuts by hand if dough is too stiff.
  7. Form into two long logs about 2" wide and 3/4 to 1" high.
  8. Chill for 20 minutes.
  9. Bake for 20 minutes at 350 degrees F.
  10. Remove from oven and and allow to cool for about 5 minutes, then slice on the diagonal into 1" wide slices.
  11. Put sliced bars on a silpat or parchment lined cookie sheet, cut side up, and bake for 7-8 minutes or until golden brown. Flip biscotti over and bake another 7 minutes. Biscotti should be barely golden brown.
  12. Allow biscotti to cool completely before storing in an airtight container.
  13. Makes 2 dozen larger biscotti or 48 small biscotti.

Notes

  • Make these biscotti gluten free using a gluten free flour blend.
  • If you want smaller biscotti, adjust the cooking time
  • Gluten free flour blend
  • Dough will be quite stiff. If so, fold in chips, cherries and nuts by hand.
  • Biscotti make a great gift. 
  • Store in an airtight container for up to 10 days.
  • Substitute pecans or walnuts if desired.
