Biscuit Breakfast Sandwiches

Homemade biscuits made into a breakfast meal. Fill each biscuit for egg, prosciutto, and cheese. Enjoy for a grab and go meal or freeze and enjoy anytime.

Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons kosher salt
  • 1 1/2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 2 butter sliced in chunks, sticks, chilled, unsalted
  • 1 1-2 cups buttermilk
  • ham eggs and cheese, or prosciutto

Instructions

  1. Preheat oven to 400 degrees.

  3. In a large bowl whisk the dry ingredients together. Use a pastry blender (or two knives), and cut in the butter until it is the size of small peas. Add the buttermilk and stir (won't be completely combined).
  4. Flour hands and put the dough on a floured surface kneading until dough comes together. Pat the dough or lightly roll 3/4 inch thick. Use a 3 to 3 1-1/2" biscuit cutter to form biscuits. Re-roll remaining dough and recut.
  5. Transfer to parchment lined baking sheets and bake for 25-30 minutes or until golden. Brush top with melted butter. Cool.
  6. Split biscuit and butter each side. Place on medium-high skillet and grill until toasted. Add fried egg, ham and cheese.

Notes

  • Store biscuits in the refrigerator. To Assemble later, microwave the biscuit for about 10 seconds. Split biscuit and butter each side. Place on medium-high skillet and grill until toasted. Add egg filling.
