Biscuit De Savoie Recipe (Savoy Cake)

A delicious and classic biscuit de savoie recipe also referred to as savoy cake or gâteau de savoie. This easy French sponge cake recipe is a perfect dessert to be enjoyed on a hot summer day and best part is that it's completely fat free.

Ingredients

  • 120 grams of all-purpose flour
  • 120 grams sugar
  • 8 large eggs separate the yolks and whites

Instructions

  1. Preheat oven to 210 °C and grease mini bundt cake molds.
  2. In a bain-marie, beat the yolks with the sugar using a whisk until it the temperature reaches 50°C/55°C.
  3. Remove from the heat and continue to beat with a whisk until it cools down.
  4. Beat the egg whites and add slowly add the sugar until still peaks are formed.
  5. Carefully incorporate the beaten yolks with the meringue, then add the flour in portions and fold into the batter.
  6. Fill the cake molds and bake for 8-10 minutes.
  7. Remove cakes from the oven and allow them to cool for 5 minutes before removing them from cake molds.
  8. Completely cool on wire rack.
  9. Enjoy!
