																							Ingredients
- 1 lb lean ground bison meat
 - 1 tablespoon Dijon mustard
 - 1 teaspoon dried oregano
 - 1 teaspoon garlic powder
 - 1 teaspoon paprika
 - 1 teaspoon salt or more to taste
 - ½ teaspoon ground pepper
 - ½ cup crumbled Feta cheese
 - Optional: 1 cup baby spinach finely chopped
 - Toppings: butter lettuce leaves red onion, toasted buns, tomato, ketchup, or mustard
 
Instructions
- In a large bowl, mix together ground bison meat, Dijon mustard, dried oregano, garlic powder, paprika, salt, pepper, and crumbled feta cheese. If desired, add finely chopped baby spinach.
 - Form the mixture into 4 equal-sized patties, about ½ inch thick.
 - Preheat a skillet or grill pan over medium heat, or preheat your grill to medium-high (375°F to 400°F). Grease the grill by using spray or dipped paper towels in oil.
 - Cook the burgers for 2 - 4 minutes on each side for a medium-well doneness. Adjust the cooking time according to your preferred level of doneness.
 - Air Fryer: You can air-fry bison burgers. Preheat your air fryer to 370°F (187°C), then cook the burgers for about 5 minutes on one side. Flip them and cook for an additional 2-3 minutes until they reach your desired level of doneness.
 - Once cooked, assemble your burgers with your favorite toppings and buns. Consider buttery toasted buns or sourdough buns and top with lettuce, tomato, red onion, and your favorite condiments. Serve with a side of Greek salad. Enjoy!
