Black Bean and Sweet Potato Baked Flautas

Ingredients

  • 1 flour tortilla small/taco size, package
  • 1 15 ounce black beans canned
  • 1 cup corn
  • 1 sweet potato cooked and diced into small pieces, medium
  • ½ onion diced (any color onion works, large
  • ½ teaspoon chili powder
  • ½ teaspoon cilantro dried or fresh
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper or red pepper flakes; optional
  • 2 oz cream cheese room temperature (can use low fat if desired), cut into small cubes
  • 6 ounces pepper jack cheese grated
  • ¼ cup Red Enchilada Sauce
  • salt to taste
  • black pepper to taste
  • olive oil spray form
  • Toothpicks
  • salsa guacamole, and plain greek yogurt or sour cream for dipping

Notes

  • See below photo for step #3 visualization**You may have to secure the flauta with a toothpick to keep it closed (I always do this)
