Black Bean and Sweet Potato Baked Flautas

Ingredients
- 1 flour tortilla small/taco size, package
- 1 15 ounce black beans canned
- 1 cup corn
- 1 sweet potato cooked and diced into small pieces, medium
- ½ onion diced (any color onion works, large
- ½ teaspoon chili powder
- ½ teaspoon cilantro dried or fresh
- ½ teaspoon cumin
- ¼ teaspoon cayenne pepper or red pepper flakes; optional
- 2 oz cream cheese room temperature (can use low fat if desired), cut into small cubes
- 6 ounces pepper jack cheese grated
- ¼ cup Red Enchilada Sauce
- salt to taste
- black pepper to taste
- olive oil spray form
- Toothpicks
- salsa guacamole, and plain greek yogurt or sour cream for dipping
