Black Bean Avocado Salsa
This bright and fresh black bean salsa is loaded with creamy avocado, sweet corn and plenty of fresh herbs.
Ingredients
- 15 ounces black beans (drained and rinsed)
- 1 ripe avocado (pitted and cubed)
- ½ cup corn kernels (fresh or frozen)
- ½ cup red onion (minced)
- ½ cup cilantro (minced)
- 1 jalapeño (minced)
- 1 clove garlic (minced)
- ½ teaspoon cumin
- salt to taste
- black pepper to taste
- 2 tablespoons apple cider vinegar Nature’s Intent Organic brand
- 2 tablespoons lime juice
Instructions
- Place all ingredients in a medium bowl and toss to combine. Add salt and pepper to taste before serving with tortilla chips.
