Ingredients

  • 1 (15-ounce) can black beans, drained and rinsed
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup melted salted butter
  • 1 large egg
  • ¼ teaspoon salt
  • 1 teaspoon instant coffee
  • 2 teaspoons vanilla extract
  • ½ teaspoon baking powder
  • ¾ cup semi-sweet chocolate chips

  1. Preheat the oven to 350 degrees Fahrenheit and spray an 8 x 8 x 2-inch baking pan with nonstick cooking spray.
  2. Add 1 (15-ounce) can black beans, to a food processor and blend until smooth.
  3. Add ⅓ cup unsweetened cocoa powder, ½ cup all-purpose flour, ½ cup granulated sugar, ¼ cup melted salted butter, 1 large egg, ¼ teaspoon salt, 1 teaspoon instant coffee, 2 teaspoons vanilla extract, and ½ teaspoon baking powder and blend until combined. Scrape down the sides and bottom of the food processor and blend for a few more seconds to ensure the batter is fully combined.
  4. Transfer the batter to a medium bowl and stir in ¾ cup semi-sweet chocolate chips.
  5. Pour the batter into the prepared baking pan. Sprinkle a few extra chocolate chips on top, if desired, and bake for 21-24 minutes, until a toothpick comes out clean from the center.
  6. Let the brownies cool for at least 10 minutes before serving.
