Black Bean Chicken Chili

The best black bean chicken chili! Make it easily with a rotisserie chicken, black beans, fire roasted tomatoes, green chilis and all the toppings. It is super satisfying and such a delish comfort food dish.

Ingredients

  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 4 garlic cloves minced
  • kosher salt and pepper
  • 2 cups cooked, shredded chicken
  • 2 teaspoons cumin
  • 2 teaspoons smoked paprika
  • 1 teaspoon chili powder
  • 4 to 5 cups chicken stock
  • 1 (28 ounce) can fire roasted crushed tomatoes
  • 2 (14 ounce) cans black beans, drained and rinsed
  • 2 (4 ounce) cans diced green chiles
  • ½ cup sour cream
for topping
  • shredded cheddar cheese
  • tortilla chips
  • sour cream
  • green onions
  • fresh cilantro

Instructions

  1. Heat the olive oil in a pot over medium-low heat. Add the onions, garlic and a big pinch of salt and pepper. Cook, stirring often, until the onions soften, about 5 minutes.
  2. Add in the chicken, cumin, smoked paprika and garlic powder. Stir and cook for another 2 to 3 minutes.
  3. Add in the stock, crushed tomatoes, black beans and diced green chiles. Bring the mixture to a boil, then reduce to a simmer. Cover and simmer for 15 to 20 minutes.
  4. Stir in the sour cream. Stir until it all melts in. Taste and season with more salt and pepper if needed.
  5. Serve with cheddar cheese, tortilla chips, cilantro, green onions and more sour cream.
