Black Bean Salad

This easy black bean salad recipe is packed with vibrant colors and bold flavors! It’s a satisfying main dish, or side dish with a healthy twist making it the ultimate plate of yum!

Ingredients

DRESSING
  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cumin
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
SALAD
  • 1 can black beans drained and rinsed
  • 1 can sweet corn drained and rinsed
  • 1 cup red bell pepper diced
  • ¼ cup red onion diced finely
  • 1.5 tablespoons Jalapeño diced finely
  • ½ cup fresh cilantro chopped

Instructions

Make the dressing
    Cup of Yum
  1. Combine the lime juice, olive oil, garlic powder, onion powder, cumin, salt and pepper in a bowl and whisk until well combined. You may also use a jar with a lid and shake vigorously. Refrigerate. Show un whisked dressing and then whisked dressing.
Make the salad
  1. In a large bowl, add the black beans, corn, bell pepper, onion, jalapeno and cilantro. Shot of ingredients in the bowl – kind of layer them out so they can be seen separately.
  2. Mix until well combined. Shot of mixed bowl with ingredients well combined.
Assemble
  1. Pour dressing over salad, and mix well
  2. Sprinkle with extra cilantro
