Black Beans, Feta, Basil, Red Onion, and Tomato Salad Recipe
This salad combines black beans, crumbled feta, fresh basil, tomatoes, and red onion, tossed in a tangy dressing of white balsamic vinegar, olive oil, lemon juice, and spices. The contrast of creamy feta with crisp vegetables and herbaceous notes creates a refreshing and balanced dish. It is served chilled and pairs well as a side or light meal during warmer weather or as a fresh addition to any table.
Ingredients
- 15 oz black beans 1 can, drained, rinsed
- ⅓ cup feta cheese crumbled
- 10-12 basil fresh, cut into strips
- 1 Roma tomato cored, diced
- ¼ cup red onion dices
Dressing
- 2 Tbsp white balsamic vinegar
- 1 Tbsp olive oil
- ½ tsp kosher salt
- ¼ tsp oregano dried
- ¼ tsp thyme dried
- 1 tsp lemon juice fresh squeezed
- ¼ tsp Dijon mustard
Instructions
- To prepare the salad:
- In a large bowl, mix together the black beans, feta cheese, basil, red onion, and tomatoes.
- For the dressing:
- In a small bowl whisk together balsamic vinegar, olive oil, Kosher salt, oregano, thyme, lemon juice, and Dijon mustard until all ingredients are well blended.
- Pour over the bean mixture and mix until ingredients are well coated.
- Chill until ready to use.
Notes
- Prepare the salad ingredients ahead but add dressing only when ready to serve to maintain freshness.
- This salad stores best refrigerated for up to 1 day after dressing is added; beyond that, texture quality declines.
- Do not freeze since thawing causes sogginess and loss of crispness.
- To change the flavor profile, consider adding spices for a more Mexican-inspired variation.
