Black Pepper Udon with Beef

This black pepper udon with beef is the perfect weeknight dinner. It comes together quickly and is packed full of flavor. Thick, chewy noodles coated in an irresistible black pepper sauce with tender beef and spinach, this beef udon will definitely hit the spot.

Ingredients

For the Black Pepper Sauce
  • 4 tablespoons soy sauce low sodium
  • ½ tablespoon dark soy sauce
  • 4 tablespoons dark brown sugar
  • 1½ teaspoon coarse black pepper or more
  • 1 teaspoon cornstarch
  • ¼ cup chicken broth or any broth of choice
For the Udon
  • 4 packet frozen udon noodles 250 grams per packet
  • 1 tablespoon oil
  • 1 pound thinly sliced ribeye or any thinly sliced beef
  • 8 ounce baby spinach
  • 1 tablespoon oyster sauce

Instructions

  1. In a bowl, combine the soy sauce, dark soy sauce, dark brown sugar, coarse black pepper, cornstarch, and chicken broth.
  2. Bring a pot of water to a boil. Cook the udon in the pot of boiling water according to the package’s instructions. Mine takes 1 minute to cook. Drain the noodles and set aside.
  3. In a large skillet, heat the oil over medium-high heat and add the beef to the skillet. Saute until halfway cooked.
  4. Give the sauce a quick stir again and then add the udon noodles and sauce to the skillet.
  5. Toss to combine and cook for another 2 to 3 minutes or until the sauce has thickened to your liking.
  6. Add the spinach and toss to combine. Once the spinach has wilted into the udon noodles, add the oyster sauce and toss to combine.
  7. Serve as is or garnish with toasted sesame seeds and green onions.
