Black Rice With Peaches and Blueberries

Ingredients

  • 1 cup black forbidden rice cooked (I used my rice cooker)
  • 1 peach chopped small
  • 1 cup blueberries
  • 1 bunch mint torn into pieces
  • DRESSING:
  • 2 tablespoon olive oil
  • 2 tablespoon honey
  • Juice of 1 lime
  • zest of 1 lime

Instructions

    Cup of Yum
  1. Mix cooked rice with peaches, blueberries, and mint.
  2. In a separate bowl, mix oil, honey, and lime. Pour over rice.
  3. Serve at room temperature.
