Ingredients
- 1 cup black forbidden rice cooked (I used my rice cooker)
- 1 peach chopped small
- 1 cup blueberries
- 1 bunch mint torn into pieces
- DRESSING:
- 2 tablespoon olive oil
- 2 tablespoon honey
- Juice of 1 lime
- zest of 1 lime
Instructions
- Mix cooked rice with peaches, blueberries, and mint.
- In a separate bowl, mix oil, honey, and lime. Pour over rice.
- Serve at room temperature.
