Blackberry and Lemon Mascarpone Crostini

A beautiful appetizer with toasted crostini, creamy mascarpone cheese, sugared blackberries, and fresh lemon zest.

Ingredients

  • 1 baguette sliced and toasted, fresh
  • 2 cups blackberry fresh
  • 1/3 cup sugar more or less depending on how ripe the fruit is
  • 8 ounces mascarpone cheese or softened cream cheese
  • 1 lemon zested
  • honey
  • thyme mint, basil, optional herbs

Instructions

  1. Lightly toast slices of french baguette.
  2. In a bowl, combine blackberries and sugar. Set aside and let marinate for at least 30 minutes. Stir every few minutes.
  3. Generously spread mascarpone cheese over each slice. Top with sugared blackberries. Sprinkle with lemon zest. Drizzle with honey.
  4. Top with fresh herbs, if you so desire or place on platter as garnish.
