Ingredients

  • 2 chicken breasts , skinless, boneless, and cut in half longwise
  • 1/2 teaspoon  paprika
  • 1/8 teaspoon salt
  • 1/4 teaspoon  cayenne pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon dried thyme
  • 1/8 teaspoon ground white pepper
  • 1/8 teaspoon onion powder
  • 2 tablespoons unsalted butter
  • 2 tablespoons vegetable oil

Instructions

  1. Preheat oven to 350 degrees.
  2. Heat a large cast iron skillet over high heat and add butter and vegetable oil.
  3. Season the chicken breasts with the spice mixture.
  4. Sear on each side for 4 minutes, then place the pan in the oven and cook for 18-20 minutes until cooked through.
  5. Note: Oven cooking helps keep the spices from becoming too bitter.
