Blackened Chicken Avocado Power Bowls
Blackened Chicken Avocado Power Bowls have the best spiced rubbed blackenend chicken with so many power foods! Avocado, chickpeas, red cabbage and roasted veggies come together in this healthy and flavorful bowl!
Ingredients
Blackened chicken
- 1 tablespoon chili powder McCormick brand
- 2 teaspoons paprika McCormick brand
- 1 teaspoon onion powder McCormick brand
- 1 teaspoon cumin McCormick brand
- ½ teaspoon garlic powder McCormick brand
- 1 teaspoon Italian seasoning McCormick brand
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 pounds chicken breast thinly sliced, boneless skinless
- 2 tablespoons olive oil
Power bowls
- 2 cups broccoli florets
- 1 red bell pepper sliced
- 1 yellow bell pepper sliced
- 1 (15-ounce) chickpeas canned
- 2 tablespoons olive oil
- 1 cup red cabbage chopped
- 1 avocado chopped
Instructions
To prepare the blackened chicken
- In a small bowl add 1 tablespoon McCormick Chili Powder, 2 teaspoons McCormick paprika, 1 teaspoon McCormick onion powder, 1 teaspoon McCormick cumin, ½ teaspoon McCormick garlic powder, 1 teaspoon McCormick Italian Seasoning, 1 teaspoon salt and ¼ teaspoon pepper. Rub the spice rub evenly on the front and back of 2 pounds boneless skinless chicken breasts.
- In a medium-sized skillet over medium-high heat add 2 tablespoons olive oil. Add the chicken and cook on each side about 2-3 minutes or until cooked through to 165 degrees Fahrenheit.
To prepare the power bowls
- Preheat oven to 425 degrees Fahrenheit. On a baking sheet add 2 cups broccoli florets,1 sliced red bell pepper, 1 sliced yellow bell pepper and 1 (15-ounce) can chickpeas. Salt and pepper and drizzle with 2 tablespoons olive oil . Roast for 15 minutes or until tender.
- To assemble divide the chicken evenly with the broccoli, peppers, chickpeas, 1 cup chopped red cabbage, and 1 chopped avocado.
