Blended Baked Oats Recipe

Creamy blended baked oats using banana, peanut butter and chocolate chips, but with 11 other variations!

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 ripe banana
  • 1/2 cup milk , or non-dairy milk
  • 1 large egg
  • 2 tablespoons creamy peanut butter
  • 2 tablespoons real maple syrup
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 1/4 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease 2 8-ounce oven-safe bowls or ramekins. set aside.
  2. Add the oats, banana, milk, egg, peanut butter, maple syrup, baking powder, cinnamon, vanilla and salt to a blender. Blend until fully combined and mixture starts to smooth, approximately 1 minute.
  3. Stir in 2 tablespoons of the chocolate chips by hand.
  4. Pour the blended oats into the prepared bowls and top with the remaining chocolate chips.
  5. Bake for 25 minutes or until it passes the toothpick test. Mixture can be a little loose and creamy. Remove and let it rest for 5 minutes before enjoying.

Notes

  • Also bake them in a muffin pan, but reduce cooking time to 15-18 minutes.
