Blended Banana Baked Oatmeal
Blended Banana Baked Oatmeal combines rolled oats, ripe bananas, eggs, and plant-based milk into a smooth batter, baked to produce a soft, cake-like breakfast dish. Spiced with cinnamon and optionally enhanced by chocolate chips, this baked oatmeal yields a moist texture with the natural sweetness of banana and maple syrup, making it a hearty, comforting morning option.
Ingredients
- 2 cups rolled oats
- 2 banana large, ripe
- 4 egg large
- 1 cup non-dairy milk of choice
- 1 ½ tsp vanilla extract optional, pure
- 2 Tbsp maple syrup pure
- 2 Tbsp avocado oil optional
- 1 teaspoon ground cinnamon
- ½ tsp baking soda
- 1 tsp salt sea salt
- ½ cup chocolate chips optional, up to 1 cup
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line an 8-inch square pan with parchment paper.
- Add all of the ingredients (except for the chocolate chips) to a high-powered blender or food processor. Blend until everything is completely combined and a smooth batter forms.
- Pour the blended oat mixture into the prepared baking dish. If you’d like, you can sprinkle the batter with chocolate chips - they will sink but this is a great way of getting chocolate chips inside of the baked oats.
- Bake on the center rack of the oven for 30 to 35 minutes, until the oats are fluffy and test clean.
- If you’d like, sprinkle the breakfast cake with more chocolate chips.
- Allow the oats to cool for at least 15 minutes before slicing and serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days for freshness.
- Serve the baked oatmeal warm with toppings such as butter, honey, peanut butter, or almond butter for additional flavor and richness.
