Blended Cottage Cheese
Blended cottage cheese is creamy, airy and fluffy! If you don't like the curds in cottage cheese, this is the way to enjoy it. Serve it as a savory dip or as a sweet, high protein breakfast.
Ingredients
- 10 oz cottage cheese 300g / 1 ⅓ cup, full-fat
Sweet Whipped Cottage Cheese Add-In
- 1 tbsp syrup or honey / maple syrup, sugar-free
Savory Whipped Cottage Cheese Add-In
- 2 teaspoon lemon juice
- 1 teaspoon extra-virgin olive oil
- ⅛ teaspoon black pepper ground
Instructions
Method Sweet
- Place the cottage cheese and sugar-free syrup or honey in a food processor. Process on high, scraping the sides of the bowl down halfway through, until smooth and creamy, about 1 minute.
- Serve with chopped fruit or berries and optional chopped toasted nuts or seeds.
Method Savoury
- Place the cottage cheese, lemon juice, olive oil and pepper in a food processor. Process on high until smooth and creamy, about 1 minute. Scrape the sides of the bowl down halfway through.
- Garnish with optional herbs, sumac, more black pepper and a drizzle of olive oil.
Notes
- 4g net carbs for the whipped cottage cheese without toppings.
- 300g of cottage cheese (1 ⅓ cups) makes 3 servings.
- Store in the fridge for up to 3 days.
