BLT Bruschetta
BLT Bruschetta transforms everyone's favorite classic sandwich into an upscale appetizer that is perfect for brunch or a dinner party!
Ingredients
- ½ cup mayonnaise
- 4 ounces goat cheese
- 3 Roma tomato diced
- 1 cup lettuce finely chopped
- 8 lices Bacon cooked and crumbled
- ¼ cup olive oil
- 1 French bread cut into 3/4-inch slices, loaf
- 1 clove garlic
- salt
- black pepper
Instructions
- Stir together the mayonnaise and goat cheese until well mixed. Season with salt and pepper, to taste. Cover and refrigerate until ready to serve.
- Preheat oven to 325 degrees. Arrange the bread slices on an ungreased baking sheet and brush with olive oil. Bake for 10 minutes.
- Meanwhile, toss the diced tomatoes, lettuce and bacon with 1 Tbsp of olive oil.
- Remove the bread from the oven and immediately rub each piece with the raw garlic clove. Smear each piece of toasted bread with some of the goat cheese mayo spread and top with a spoonful of the BLT mix. Finish with a sprinkle of kosher salt and fresh ground black pepper. Serve immediately.
