BLT Guacamole
Stay with me guys – I’m about to change your life. BLT Guacamole. I know – you’re like bacon – yes, tomatoes – yes… but lettuce in my guacamole? Well, I’m here to tell you that it’s EVERYTHING!
Ingredients
- 3 Bacon strips
- 3 avocado seeds removed
- 2 romaine lettuce halved, shredded, baby leaves
- 1 red onion finely chopped, small
- 2 tomato finely chopped
- 1 lime juiced
- 1 lemon juiced
- 2 tablespoons cilantro chopped
- 2 tablespoons chives chopped
- salt kosher salt, to taste
- black pepper kosher salt, to taste
- cassava chips Garden of Eatin’ brand, grain free
Instructions
- Cook the bacon. Drain on paper towel and break into small pieces
- Roughly mash avocado in a medium bowl. Add in the lettuce, onion, tomato and bacon. Stir lime and lemon juice, cilantro and chives into the avocado. Season with salt and pepper to taste.
- Serve with Garden of Eatin’ Grain Free Cassava Chips
Notes
- This is not to be missed! Besides just dipping (and eating from a spoon??) this would be AMAZING as avocado toast.
