Stay with me guys – I’m about to change your life. BLT Guacamole. I know – you’re like bacon – yes, tomatoes – yes… but lettuce in my guacamole? Well, I’m here to tell you that it’s EVERYTHING!

Ingredients

  • 3 Bacon strips
  • 3 avocado seeds removed
  • 2 romaine lettuce halved, shredded, baby leaves
  • 1 red onion finely chopped, small
  • 2 tomato finely chopped
  • 1 lime juiced
  • 1 lemon juiced
  • 2 tablespoons cilantro chopped
  • 2 tablespoons chives chopped
  • salt kosher salt, to taste
  • black pepper kosher salt, to taste
  • cassava chips Garden of Eatin’ brand, grain free

Instructions

    Cup of Yum
  1. Cook the bacon. Drain on paper towel and break into small pieces
  2. Roughly mash avocado in a medium bowl. Add in the lettuce, onion, tomato and bacon. Stir lime and lemon juice, cilantro and chives into the avocado. Season with salt and pepper to taste.
  3. Serve with Garden of Eatin’ Grain Free Cassava Chips

Notes

  • This is not to be missed! Besides just dipping (and eating from a spoon??) this would be AMAZING as avocado toast.
