BLT Pasta Salad Recipe

BLT Pasta Salad turns the classic sandwich into a salad! Crispy bacon with sweet cherry tomatoes, romaine lettuce, pasta and a healthier ranch dressing. If you love the famous BLT sandwich as much as I do then you are in for a real treat with this easy pasta salad recipe! Instead of packing sandwiches for your next picnic or work or school lunch, try this easy pasta salad.

Ingredients

Salad
  • 1 lb rotini pasta (or any short pasta (ie penne, bow tie, etc))
  • 1 lb Bacon (preferable thick cut)
  • 2 cups cherry tomatoes (halved)
  • 3 cups romaine lettuce (chopped, approximately 1 head)
  • 2 avocados (peeled, pitted and cubed)
Dressing
  • 2 cups plain greek yogurt
  • 1 clove garlic (minced)
  • 2 tablespoon fresh parsley
  • 1 tablespoon olive oil (or neutral oil of choice (ex. avocado oil))
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 2 tablespoon lemon juice
  • 2 tablespoon ranch seasoning mix (ex. dry Hidden Valley Ranch or Club House ranch seasoning mix)

Instructions

  1. Boil the pasta in a large pot of salted water according to package directions until al denté and still a bit firm. Rinse under cold water and drain well. Transfer to a large mixing bowl.
  2. While the pasta is cooking, chop the bacon into ½" pieces and cook in a large frying pan or skillet over medium heat until desired crispness. Transfer the cooked bacon to paper towel lined plate and drain.
  3. Add the bacon, tomato, lettuce and avocado to the pasta bowl.
  4. In a medium sized bowl add all the dressing ingredients and mix until evenly combined.
  5. Drizzle the dressing over the pasta salad and gently toss until evenly combined. Serve and enjoy!
