BLT Salad
All the fresh ingredients you love in a BLT salad layered in one big bowl or prepped as a healthy work lunch.
Ingredients
- 2 romaine lettuce shredded, heads
- 1 pint cherry tomato halved
- ½ cup mozzarella cheese shredded
- 6 lices Bacon cooked and chopped
- 1 avocado diced
- ranch dressing
Instructions
Prep:
- If making homemade Ranch dressing, mix the ingredients in a jar and refrigerate it until ready to use.
- Wash chop the romaine lettuce and half the cherry tomatoes.
- Cook the bacon in a pan or microwave. Let it cool and coarsely chop.
Make the salad:
- In a large salad bowl, make a base with the chopped Romaine. Top it with cherry tomatoes, mozzarella, chopped bacon, and avocado.
- Drizzle ½ cup salad dressing over the salad and toss to combine.
For meal prep:
- Layer all the salad ingredients inside 4 meal prep containers except for the sliced avocado. Pack about 2 tablespoons of salad dressing inside four small, lidded containers. On the morning of, slice ¼ of an avocado and place it on top of the salad. Drizzle salad dressing right before enjoying it for lunch.
