Ingredients

  • 6 thick sliced sliced bacon
  • 6 large hard boiled eggs peeled
  • 1/3 cup mayonnaise
  • 1/3 cup crumbled blue cheese
  • 2 tablespoons minced chives
  • 1 teaspoon brown mustard
  • ½ teaspoon ground black pepper
  • ¼ teaspoon kosher salt

Instructions

    Cup of Yum
  1. Add bacon to a 12-inch skillet and cook over medium-high heat until crispy, about 5 minutes per side.
  2. Drain the bacon from the skillet on a paper towel lined plate and let cool. Once cooled, chop it into small pieces.
  3. Carefully cut eggs in half and remove the yolk.
  4. Add the yolk to a mixing bowl. Add almost all the bacon (save some for sprinkling on top), mayonnaise, blue cheese, chives, brown mustard, black pepper, and kosher salt.
  5. Stir until combined and creamy.
  6. Fill the egg white halves with the yolk filling.
  7. You can do this by scooping it into the egg or putting it in a piping bag and piping it into the egg. Top each egg with a little piece of bacon.
  8. Keep cold until ready to serve.
