Blueberry Almond Protein Balls (No-Bake)

If you're looking for your new favorite no-bake snack, you have to try these Blueberry Almond Protein Balls! They're super easy to make with simple ingredients and bursting with flavors of blueberry, almond and honey in each bite! They seriously make the BEST snack or pre-workout treat!

Ingredients

  • 2 cups old fashioned oats (160g)
  • 1/3 cup vanilla protein powder (40g)
  • 1 Tbsp cinnamon
  • 1/4 cup honey (84g)
  • 1/4 cup unsweetened applesauce (60g)
  • 1/4 cup almond butter (56g)
  • 1/4 cup dried blueberries (40g)
  • 2 Tbsp chopped sliced almonds (15g)
  • 2 tsp vanilla extract
  • 1/4 tsp almond extract

Instructions

  1. Add all the ingredients (except the dried blueberries and almonds) to a food processor and mix until all ingredients are combined well. Then stir in the dried blueberries. 
  2. Use a small cookie scoop to scoop out 20 balls (about a heaping tablespoon in size), or however many you wish. After scooping, roll into balls with your hands. Then roll a few of the chopped almonds onto the outer surface of each ball. Rolling tip so it doesn't stick to your hands: I like to wear gloves for easy clean up! Or you can dampen your palms with a little water or nonstick spray to help prevent the sticking.
  3. Keep balls stored in an airtight container in the fridge or freezer for up to four weeks.

Notes

  • To store: keep stored in an airtight container in the fridge or freezer for up to 4 weeks. I would not recommend leaving these out at room temperature.
