Blueberry Cherry Cobbler Recipe

Sweet, juicy blueberries and plump, tart cherries come together in a buttery, golden crust for a cobbler that's bursting with summer flavor.

Ingredients

  • 2 cups fresh cherries pitted
  • 2 cups fresh blueberries
  • 1 egg
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 2 Tablespoon melted butter

  1. Preheat oven to 350 degrees F. Mix the blueberries and cherries in a 2 quart greased casserole.
  2. Beat egg, sugar and milk together.
  3. Combine flour, baking powder, cinnamon and salt ina separate bowl. Then add to the egg mixture and stir to combine.
  4. Stir in vanilla and melted butter. Pour the batter over the fruit.
  5. Bake 45 minutes until cooked through. Serve with ice cream or whipped cream.

Notes

  • If you are using fresh cherries, wear an apron when pitting them. The cherry pits can be like mini paintballs. 
  • If you use frozen cherries or blueberries, add two tablespoons of flour and stir to coat. You don't need to thaw them first. The flour will help keep the filling from getting too runny.
  • Your batter should be pourable but not too runny, like pancake batter. If it's too thick, a splash of milk can loosen it up.
