Blueberry Cobbler

Sweet batter topped with vibrant blueberries make this easy blueberry cobbler perfect for any breakfast or brunch!

Ingredients

  • 2 cups blueberries fresh or frozen
  • ¼ cup butter softened
  • 1 cup granulated sugar divided
  • 1 cup all purpose flour
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • ½ cup milk

Instructions

  1. Combine blueberries and 1/2 cup sugar in a small bowl; set aside
  2. Lightly grease an 8x8 baking dish; set aside
  3. Preheat oven to 375 degrees
  4. In a large mixing bowl, cream the butter and 1/2 cup of the sugar; set aside
  5. In a medium bowl, combine flour, baking powder and salt
  6. Add flour mixture to butter mixture and begin to mix
  7. Add milk while flour mixture is blending with butter mixture; combine until a thick batter forms
  8. Spread batter in baking dish
  9. Spread blueberries on top of batter and bake in a 375 degree oven for 40-45 minutes
  10. Allow to cool 15 minutes before serving
