Blueberry Cobbler with Cake Mix

This blueberry cobbler with cake mix is a new take on a classic. This easy blueberry cobbler dump cake comes together quickly and delivers everything we love about both cake and cobbler in one delicious dish.

Ingredients

  • 2 cups fresh blueberries rinsed
  • 1 can (19 oz) blueberry pie filling
  • 1 box (15 ¼ oz) box of vanilla cake mix
  • ½ cup unsalted butter melted or 1 stick
  • 2 tablespoons lemon zest approx. 1 large lemon
  • 2 teaspoons freshly squeezed lemon juice
  • 2 tablespoons granulated sugar optional

Instructions

  1. Grease a 9x13 dish and preheat oven to 350F.
  2. Add blueberries and blueberry pie filling to the dish and mix.
  3. In a small bowl add cake mix, melted butter, lemon zest, lemon juice and evenly mix until combined. Then crumble and place over blueberries.
  4. Optional: sprinkle sugar on top.
  5. Bake for 45-50 minutes until the cake mix starts to become golden.
  6. Allow to cool on a wire rack until it is warm and serve whipped cream or ice cream for a side.

Notes

  • Serve cobbler warm with ice cream or whipped cream for the best flavor!
  • Adjust the baking time depending on how golden you'd like the top to turn out. Bake it longer for a darker result or less for something lighter in color.
  • Allow your cobbler to cool slightly before serving so the filling can thicken. If you serve it right away all those delicious juices may run out when you cut into it!
  • Make sure all the topping ingredients are well mixed before transferring them onto the pre-greased 9x13-inch baking dish. This prevents unblended dry spots.
