Blueberry granola waffles

These waffles are easy to make and full of tasty flavors!

Ingredients

  • 1 cup all purpose flour 140g plain flour
  • 1 cup whole wheat flour 140g
  • 1 cup granola 100g approx
  • 1 tablespoon baking powder
  • 1 pinch salt
  • 2 eggs
  • 2 cups milk 480ml
  • 2 tablespoon vegetable oil
  • 1 cup blueberries 160g, fresh, or frozen defrosted
  • maple syrup confectioners sugar, blueberries, granola or as you prefer to top

  1. Mix together the all purpose and wholewheat flours, the granola, baking powder and salt in a medium-sized bowl. Note - you can do this ahead of time and keep covered.
  2. Pre-heat your waffle iron.
  3. In a separate bowl, whisk together the eggs, milk and oil. Add this mixture, along with the blueberries, to the dry ingredients and mix well. being careful not to break up the blueberries.
  4. Pour approximately 1 cup of the mixture in to the pre-heated waffle iron. Flip (if possible, depends on model) and set the timer for 4 minutes.
  5. Carefully remove with plastic-coated tongs and serve, topped with your choice of maple syrup, blueberries, granola, confectioners sugar or the whole lot!

Notes

  • Tip - make the whole batch into waffles when the batter is fresh as if not, they will not rise as well. You can re-heat leftover, cooled cooked waffles after refrigerating or freezing and defrosting. They take around a minute to re-heat in the pre-heated waffle iron.
  • Note - timing and quantity of mixture per waffle are based on the typical measurements in my waffle iron's guide. If yours is different, adjust accordingly.
