Blueberry Muffins

Ingredients

  • 1/2 cup unsalted butter softened
  • 1 1/4 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 2 cups blueberries washed, drained and picked over
  • 3 teaspoons sugar

  1. Preheat the oven to 375°F (190°C). Cream the butter and 1 1/4 cups of sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Then, add the vanilla extract.
  2. Sift together the flour, salt, and baking powder, then add to the creamed mixture alternately with the milk.
  3. Crush 1/2 cup of blueberries with a fork and mix them into the batter. Then, fold in the remaining whole blueberries.
  4. Line a 12-cup standard muffin tin with cupcake liners and fill them with batter. Sprinkle 3 teaspoons of sugar over the tops of the muffins and bake for about 30 to 35 minutes.
  5. Remove the blueberry muffins from the tin and let them cool.
