Ingredients
- 2 cups (200g) quick oats
- 1 cup (237ml) unsweetened applesauce *
- 3 Tbsp (45ml) pure maple syrup **
- 5 Tbsp (80g) unsweetened almond butter
- 2 tsp ground cinnamon
- ¾ tsp sea salt
- 6 ounces fresh blueberries
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line a 8-inch baking pan with parchment paper or spray the pan with parchment paper.
- Transfer all of the ingredients except for the blueberries to a food processor. Process until everything is well combined. No need to separate the wet ingredients and the dry ingredients! It all goes in at the same time. Note: if you don't own a food processor, mix everything together in a large bowl by hand.
- Gently stir in the fresh blueberries using a rubber spatula or a wooden spoon.
- Transfer the blueberry oatmeal mixture to the prepared baking dish and spread it into an even layer. Bake for 18-22 minutes, or until the bars appear to be set up and feel firm when gently poked in the middle.
- Allow bars to cool for at least 20 minutes before slicing and serving. They will slice cleaner if they are cooled to room temperature.
Cup of Yum
Notes
- *Replace the applesauce with two large ripe bananas (mashed) if you prefer bananas over apples.
- **For sweeter bars, add 1 to 3 tablespoons of brown sugar, regular cane sugar, coconut sugar or maple sugar.
