Blueberry Oatmeal with Cheesecake Swirl

Ingredients

  • 1/2 cup rolled (old-fashioned) oats gluten-free, if needed
  • 1/4 teaspoon cinnamon
  • Sweetener of choice (such as Stevia) to taste
  • 1 cup water
  • 1/2 teaspoon vanilla extract divided
  • 1 1/2 tablespoons low-fat cream cheese
  • 1/2 cup blueberries frozen or fresh

Instructions

  1. In a small pot, combine the oatmeal, cinnamon, and sweetener of choice.
  2. Add the water and 1/4 teaspoon of vanilla extract. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to medium-low and simmer until the oats are thick, stirring constantly. About 5 minutes.
  4. Take off the heat and let cool for 5 minutes.
  5. While the oatmeal cools, combine the cream cheese, sweetener of choice, and 1/4 tsp vanilla in a small bowl.
  6. Blend with an electric mixer until the mixture is light and fluffy. You'll have to stop and scrape down the sides of the bowl.
  7. Transfer the cooked oatmeal into a bowl and stir the blueberries and cream cheese mixture.
