Blueberry Orange Oatmeal Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats plus more for sprinkling
  • ½ cup brown sugar packed
  • ½ teaspoon of cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup 1 stick unsalted butter, melted and cooled
  • 1 cup plain greek yogurt
  • 1 large egg beaten
  • ½ teaspoon vanilla extract
  • 1 cup blueberries
  • Zest of 1 orange
  • turbinado sugar for sprinkling

Instructions

  1. Preheat oven to 400 degrees F. Line a 12-cup standard muffin tin with paper liners; set aside.
  2. In a large bowl, combine flour, oats, brown sugar, cinnamon, baking powder, baking soda and salt.
  3. In a large glass measuring cup or another bowl, whisk together butter, yogurt, egg and vanilla. Pour mixture over dry ingredients and stir using a rubber spatula just until moist. Add blueberries and orange zest and gently toss to combine.
  4. Scoop the batter evenly into the muffin tray. Sprinkle with oats and turbinado sugar.
  5. Place into oven and bake for 15-18 minutes, or until a tester inserted in the center comes out clean.
  6. Remove from oven and cool on a wire rack.
